Pumpkin Spice Cut-Out Cookies





Yield 2 dozen cookies

Fun and festive Pumpkin Spice Cut-Out Cookies are the perfect Fall treat! No cookie dough chill time required!


For the Cookies:

3 cups all-purpose flour

2 teaspoons baking powder

1/2 teaspoon salt

2 teaspoons pumpkin spice

1 cup Crisco® all-vegetable shortening (1 baking stick)

1 cup granulated sugar

1 large egg, at room temperature

2 tablespoons whole milk

2 teaspoons vanilla extract

For the Thin Icing:

2 cups confectioners' sugar, sifted

2 tablespoons warm water, more if needed

1/8 teaspoon salt

Food coloring, optional (see post for more on how I decorated these cookies)

For the Thick Icing:

2 teaspoons lemon juice

2 egg whites

4 cups confectioners' sugar, sifted

Food coloring, optional
