Line an 8x8 baking sheet with parchment paper; lightly spray with non-stick cooking spray; set aside.
Place chocolate and oil in a medium-sized microwave safe dish. Place in the microwave and heat on low for 15 second increments, stirring the mixture in between, until chocolate is completely melted; whisk smooth.
Place half of the popcorn on the bottom of the prepared pan; pour chocolate over the popcorn, then top with remaining popcorn and a sprinkle of sea salt (if using). Allow chocolate to firm up completely (you can speed up this process by popping the pan in the fridge), then cut into small pieces.
