Last year – right around this time – I became quite obsessed with the art of homemade candy. Nothing fancy schmancy. Just simple sweet things I could whip up on a whim. Melt a little chocolate, caramelize some nuts, mix them together and POOF – you’ve got caramelized almond chocolate bark. It’s dangerously easy, you see? It took me exactly 10 minutes to make! TEN!!! I melted the chocolate (with my little coconut oil trick), poured it over this ridiculously addicting coffee caramelized popcorn, and popped it in the fridge for a few minutes to set. Then I took a blade to that sweet square and chop-chop-chopped it UP. Couldn’t be easier. Or more delightful.

Coffee Caramelized Popcorn Dark Chocolate Bark
Ingredients
- 20 ounces dark chocolate, chopped
- 1 tablespoon coconut oil
- One bag of Nature Box Coffee Caramelized Popcorn
- Pinch of sea salt, optional
Instructions
- Line an 8x8 baking sheet with parchment paper; lightly spray with non-stick cooking spray; set aside.
- Place chocolate and oil in a medium-sized microwave safe dish. Place in the microwave and heat on low for 15 second increments, stirring the mixture in between, until chocolate is completely melted; whisk smooth.
- Place half of the popcorn on the bottom of the prepared pan; pour chocolate over the popcorn, then top with remaining popcorn and a sprinkle of sea salt (if using). Allow chocolate to firm up completely (you can speed up this process by popping the pan in the fridge), then cut into small pieces.
