2(or 4 if you're really hungry...) Morning Star Veggie Sausage Patties
2burger buns
Salt and pepper, to taste
1avocado, pitted
1tablespoonunsalted butter, divided
2large eggs
1tablespoonmilk
1small ripe tomato, sliced
Red onion, thinly sliced
1tablespoonpickled jalapeƱos, optional
Instructions
Preheat oven to 300 degrees (F). Place buns on a small baking sheet and set in the oven to warm while you make your eggs and prep the other ingredients.
Scoop avocado out into a small bowl, sprinkle with salt and pepper, and smash until smooth and creamy; set aside.
Add 1/2 tablespoon of butter to TWO separate small non-stick skillets and place them over medium-heat.
In one add the veggie sausage and cook for 3 minutes on each side.
In a small bowl whisk together the eggs, milk, salt, and pepper until well beaten. Pour into the remaining buttered pan and cook for 2-3 minutes, lightly scrambling the eggs after they've begun to set. Remove from heat at once.
Remove buns from the oven and load them up with smashed avocado, sausage, eggs, and veggies! Enjoy!!!
