Hi friends! Now that summer is here and our schedules are filling up (with mostly fun stuff I hope!), I’m focusing hard on finding us fast, nourishing meals that are a snap to make, and a true joy to eat. Sometimes quick + healthy + tasty can be tricky! Ya know?
Today we’re talking breakfast. More specifically, healthy AND hearty breakfast options. If you’re looking for a fun, filling, vegetarian friendly breakfast that’s sure to keep you going for hours and hours – well friend, look no further! I’ve got you covered.
Meet the veggie sausage, egg, and avocado breakfast burger. And by burger, I mean burger. This bad boy boasts a soft potato bun stuffed with fluffy scrambled eggs, smashed avocado, and a juicy original MorningStar Farms Original Veggie Sausage Patty. I added some Summer-sweet slices of ripe tomato for fresh flavor, and a few sprigs of crisp red onion for a wonderful crunch! I also topped the burger with addictive pickled jalapeños for just a little SPICE. I love spice! All of these ingredients on one giant breakfast sandwich!? HELLO dreamboat Am I right?!

Currently this big boy breakfast burger is my go-to pre-workout meal! But it also makes a great lunch/brunch/ breakfast for dinner option. It’s VERY filling, but so fresh, light, and healthy that it helps speed me through my mornings effortlessly. Sometimes I substitute the scrambled egg for an over-easy one, and it’s just as tasty – so feel free to cook your egg anyway you please.
The really great thing about this burger is it’s highly adaptable! You can add an extra sausage patty if you’re really hungry, use a gluten-free bun if you please, or add extra veggies/toppings/cheese. Anyway you fix it, it’s a healthy, hearty, absolutely delicious way to start the day! And my current favorite. If you love a good breakfast sandwich, then I just know you’re going to love these breakfast burgers!

Veggie Sausage, Egg, and Avocado Breakfast Burger
Ingredients
- 2 (or 4 if you're really hungry...) Morning Star Veggie Sausage Patties
- 2 burger buns
- Salt and pepper, to taste
- 1 avocado, pitted
- 1 tablespoon unsalted butter, divided
- 2 large eggs
- 1 tablespoon milk
- 1 small ripe tomato, sliced
- Red onion, thinly sliced
- 1 tablespoon pickled jalapeños, optional
Instructions
- Preheat oven to 300 degrees (F). Place buns on a small baking sheet and set in the oven to warm while you make your eggs and prep the other ingredients.
- Scoop avocado out into a small bowl, sprinkle with salt and pepper, and smash until smooth and creamy; set aside.
- Add 1/2 tablespoon of butter to TWO separate small non-stick skillets and place them over medium-heat.
- In one add the veggie sausage and cook for 3 minutes on each side.
- In a small bowl whisk together the eggs, milk, salt, and pepper until well beaten. Pour into the remaining buttered pan and cook for 2-3 minutes, lightly scrambling the eggs after they've begun to set. Remove from heat at once.
- Remove buns from the oven and load them up with smashed avocado, sausage, eggs, and veggies! Enjoy!!!
