Happy Friday, friends!
What are your plans this weekend?
I have a friend in town for the night who is wildly fun, so I’m sure there’s some dancing in the near future. And then tomorrow, my mama is coming to visit for the weekend! My little brother will be with her too, and I’m super excited to show them around Brooklyn, eat fish and chips, and check out Smorgasburg for the first time this season. It’s going to be a busy few days of lovely.
Since I don’t get to cook for my family very often, I’m really excited for the meals we’ll share at home, too.
My mom loves guacamole, and always requests I make it when I’m home for holidays.
Being the people pleaser I am, especially when it comes to my mama, I’ll be mashing up a big batch right before she gets here and packing it in our park snacks bag.
It’s supposed to rain all day on Saturday, but I’m staying optimistic that we’ll be able to picnic at some point. Please rain, stay away!
I tested a few new guacamole recipes last week, and this was the winner by a long shot. Even my picky roommates who typically only eat gross boy food (I’m talking a daily diet of cheetos, chinese, and diet coke… ) couldn’t get enough of this.
Fresh crab claw meat totally makes this guac situation feel fancy!
There are avocados, of course!
Cilantro, Jalapeno, and Scallions… oh la la.
And last but not least, sweet corn and little baby tomatoes.
Take your mouth on this flavor adventure! You know you want it…

Spicy Crab and Corn Guacamole – Baker by Nature
Serves 4 hungry people, or 6 not so hungry people
Ingredients:
2 large ripe avocados, cut in half and pitted
1/2 cup cilantro
1 jalapeno, diced
1/4 cup scallions, chopped
1 tiny clove of garlic, smashed
1/4 cup chopped tomatoes (I used little grape ones cut in half)
Juice of one lime
1/2 cup corn (I used canned, but I bet fresh or thawed frozen would work too)
1/2 cup crab meat
Instructions:
Combine avocados, cilantro, jalapeno, scallions, garlic, tomatoes, and lime juice in a blender, large bowl, or food processor and pulse (or mix) until the consistency is almost completely smooth. Stir in corn and crab meat. Add salt if needed. Serve immediately!
Holy cow, this looks good! What a great twist on regular guacamole and regular crab dip! I am definitely pinning this try out . . . maybe for Cinco de Mayo!! 🙂
This is the perfect recipe for summer here in Baltimore! Next time my family has as crab feast, I’m so making this with the leftovers!
Hands down, this is the best looking guacamole I’ve seen! I’m a huge corn and crab fan so I can imagine how good this is! 😀

Hehe “gross boy food”. That was my favorite part of this post. Well, except for ALL THAT CILANTRO!!! I know the crab is supposed to be the star, and I LOVE that you added it, but cilantro is pretty much my favorite food, and my husband is always yelling at me for adding “too much” (as if that’s even possible??), so that entire 1/2 cup made me extra excited. 🙂
I always look for new ways to use avocados, and I like your recipe: adding crab and corn to guacamole! Sounds so delicious!
