Poring over those words of strength and encouragement have such a healing effect on my heart when things in the kitchen, and in life, don’t go down the way I planned. Because sometimes they just don’t. And that’s cool.
After reading some inspiring words, and cleaning up all the burnt cake on the bottom of my oven, I made us some snacks!
Bruschetta to be exact! Bruschetta with silky cream cheese, sweet slices of apple, spicy arugula, and the king of cured meat: prosciutto – these little two bite babies are pretty much the best thing ever.
Go on, make em’! You’re mouth, and friends, will thank you!
Apple, Arugula, Cream Cheese, and Prosciutto Bruschetta – Baker by Nature
Serves 4-6
1 baguette, sliced into 1/4″ pieces
2 tablespoons butter
1 large apple, (I used a Honeycrisp) washed, cored, and thinly sliced
1/2 cup cream cheese
1 cup arugula
1/2 pound prosciutto, sliced
In a large skillet over medium high heat, melt one tablespoon of butter. Add sliced baguette to the skillet, and allow the bread to brown on each side. Repeat with the rest of the butter and baguette. Allow the bread to cool for at least 3 minutes.
Assembly: Spread each piece of baguette with one tablespoon of cream cheese. Then layer one piece of prosciutto, two slices of apple, and top it off with a few pieces of arugula. Enjoy right away!

Gotta love the strong words of Johnny Cash. This snack looks delicious and simple. I love apple, cheese and prosciutto together.
It’s so simple, but this combination of toppings sounds absolutely perfect! Love the balance of flavors and textures.
These little toasts sound really good, and really easy! I would not say no to making a full plate of them and eating the whole thing for lunch. 🙂

And that’s wonderful encouragement right there. In my nature I tend to get discouraged easily by failure, and I have to remind myself often that it is part of the learning experience and not a cue to give up or throw in the towel.
