Poring over those words of strength and encouragementย have such a healing effect on my heart when things in the kitchen, and in life, don’t go down the way I planned. Because sometimes they just don’t. And that’s cool.
After reading some inspiring words, and cleaning up all the burnt cake on the bottom of my oven, I made us some snacks!
Bruschetta to be exact! Bruschetta with silky cream cheese, sweet slices of apple, spicy arugula, and the king of cured meat: prosciutto – these little two bite babies are pretty much the best thing ever.
Go on, make em’! You’re mouth, and friends, will thank you!
Apple, Arugula, Cream Cheese, and Prosciutto Bruschetta – Baker by Nature
Serves 4-6
1 baguette, sliced into 1/4″ pieces
2 tablespoons butter
1 large apple, (I used a Honeycrisp) washed, cored, and thinly sliced
1/2 cup cream cheese
1 cup arugula
1/2 pound prosciutto, sliced
In a large skillet over medium high heat, melt one tablespoon of butter. Add sliced baguette to the skillet, and allow the bread to brown on each side. Repeat with the rest of the butter and baguette. Allow the bread to cool for at least 3 minutes.
Assembly: Spread each piece of baguette with one tablespoon of cream cheese. Then layer one piece of prosciutto, two slices of apple, and top it off with a few pieces of arugula. Enjoy right away!

Ah! Thank goodness, a food blogger who admits they are not perfect! ๐ On the other hand, these bruschetta are perfect in my eyes – the sweet apples, the spicy-bitter arugula, and the creamy cheese. It all works well together!

burnt cake, I know the feeling. I baked rock hard cookies the other day and I couldn’t even tell you how it happened. But move right past it. Not everything can be perfect. But these? Now they look like perfection. A simple, yet elegant addition to any appetizer spread.
