Thick, chewy banana blondies feature an Oreo cookie crust and TONS of peanut butter cups! This easy dessert is bursting with flavor and bakes up in just 30 minutes.
Happy (day before) Thanksgiving! Would you believe it is snowing like crazy here today? Which is pretty and fun… but not so good for traveling. We’ll be heading home to Philly in just a few hours, so hopefully the commute is smooth sailing despite the frosty flakes that are heavily falling from the sky. Are you traveling for the holiday? Hosting? Or staying in your jammies and ordering delivery? We seriously contemplated that last option good and hard before deciding to schlep home and see our families 😉
Speaking of traveling, these Black Bottom Banana Peanut Butter Cup Blondies —> TRAVEL GREAT. I took a batch to a friends last week (2 hour commute; on a bus; then a train; then a subway; wrapped in tin foil and protected only by my flimsy satchel) and they held up like a champ! I love a sturdy dessert. I really really do.
These blondies have a lot going on! So I will (quickly) breakdown each part for you.
First up, the base! The black bottom crust —> er mah gosh I love it! It’s made from crushed (and de-creamed) Oreo cookies, butter, and sugar. That’s it! You’ll simply mix them together, press them in the bottom of an 8×8 pan, and pop it in the oven for 4 minutes. Easy stuff!
The blondie batter is quite basic (as most blondie recipes are). Melted butter meets brown sugar —> add flour —> then BANANA! The banana is what makes this recipe really shine. I do recommend using the ripest banana you can get your paws on. And really SMASH it up. We’re looking for banana flavor… not nasty little chunks.
You’ll pour the banana batter over the partly baked Oreo crust, then gently press about 20 peanut butter cups over the top. I used a combination of full sized peanut butter cups and minis… but only because I ran out of the full-sized during the baking process 😉 Feel free to use all large, all mini, or a mix like I did. The world is your oyster!
You’ll pop the tray in the oven and bake for 25-28 minutes, or until the blondies are set in the center.
Warning: Your house will smell INSANELY delicious as the blondies bake.
That’s just what happens when you combine chocolate, banana, and peanut butter in one awesome-sauce dessert.
Let the Black Bottom Banana Peanut Butter Cup Blondies cool completely before cutting into squares and devouring serving. Also, hide at least 4 for yourself, because these suckers go FAST! And you will want your own to nibble. Trust me.
