About a girl, a tray of cookies, and how one bite changed her peanut-hating-heart forever.
Once upon a time,
there was a silly, stubborn, sassy girl who had a strong aversion to butter of the peanut variety. She didn’t care if it was chunky, smooth, or swirled with chocolate… it just wasn’t her thing.
I mentioned she was stubborn, right?
Then, one very fine day, a bright little baking book walked into her life and wooed her over with it’s 5 ingredient recipe.
On a whim she decided to give peanut butter another chance… and after one bite, it was sweet, rich, chewy love at last!
And they lived happily ever after. THE END.

“The Treats Truck” Peanut Butter Cookies – Taken from The Treats Truck Baking Book
Ingredients:
2 eggs
2 teaspoons vanilla extract
2 cups smooth peanut butter (without added sugar)
1 cup sugar
1/2 teaspoon salt
Preheat the oven to 325 degrees (F). Line a baking sheet with parchment paper.
In a small bowl, combine the eggs and vanilla. Set aside.
Place the peanut butter in a large bowl and pour in the egg-vanilla mixture. Stir with a large spoon or mix with your hands (I mixed with my hands!!) until combined.
Add the sugar and salt and mix well.
Scoop out the dough with a spoon and roll it into balls with your hands. The size of the scoops of dough is up to you (the dough doesn’t spread much). Place the balls 2 inches apart on the baking sheet. Press the balls flat and use a fork to make crosshatch marks on the top of each cookie.
Bake for about 10 minutes, or until the center looks as light and baked as the edges. Cool completely before removing from the cookie sheet with a spatula.

Love peanut butter cookies but haven’t made them in years and years. Surprised there is no flour in the recipe — maybe my recipe didn’t have it either, though, and I’ve just forgotten. Could sure go for a warm one from the oven about now 🙂
