Tuesday, as lovely as it may be, just does not strike me as “make a homemade pie” kind of day.
Unless you’re a professional pie maker, and then… I may be wrong.
But for the rest of us folk, I’d say the luxury of time is hardly on our side come the work week.
Laundry needs washing, puppies need walking, work needs to be promptly attended to, and um, have you seen your bathroom lately? Seriously… get on that.
Ok. That last part was to me. I still flip out like a 13 year old when I’m forced to clean anything. I’m working on it.
But, back to the point!
Tuesday is a smoothie day. A smoothie that tastes as good as pie, and is acceptable for breakfast… or lunch… or whatever you’re feeling.
It’s as splendid as it sounds. And looks way better in a bathing suit.
Talk about a weekday win!
Fresh Summer berries in their prime – is there a prettier sight?
I took a pastry cutter and demolished these graham crackers. They’re acting as our pie crust! Pie crust in your smoothie is where it’s at.
Yogurt makes our smoothie thick, coconut milk lends a lovely subtle flavor, and ice insures you’re on your way to being refreshed! Honey and vanilla makes this chilly beverage warm and sweet without a single ounce of heat.

Berry Pie Smoothie – Baker by Nature
8 oz of combined berries (black,blue,straw, and raspberries were my choices) I used fresh, but frozen will work too.
6 graham crackers, crushed
1/2 cup unsweetened coconut milk
1 cup plain yogurt (I used whole milk)
1 cup ice
1 tablespoon vanilla extract
2 tablespoons honey
Wash and dry fruit; cut the tops of strawberries if using. Place fruit, crushed graham crackers, milk, yogurt, ice, and honey in blender and pulse until fully combined and no large ice chunks are left. My blender has a smoothie setting that did the job in 23 seconds!

Well damn, I wasn’t expecting the graham crackers… that came as a bit of a surprise, but I have cookie in frappaccino sometimes so it’s not really strange – sounds like a great “meal” to take with you when you’re on the go… packed with flavour. Love the photos with the berries in – so beautiful
