When it comes to tacos, I don’t discriminate. I’ve made beer braised short rib tacos, Greek Salad Chickpea tacos, and even BREAKFAST tacos that feature crispy kale and smoked gouda (nom). Basically, what I’m trying to say is, I love me some tacos.
And these tacos… these ridiculously easy and oh-so-healthy black bean, mango, and GUACAMOLE tacos. Well, they’re obviously a new favorite.
Wanna know why…?
Suuuuuure ya do! Let’s do a quick rundown of the reasons these tacos should be made and devoured by you TONIGHT.
1) Delicious. Yummy. Magnificently scrumptious. All words you will use after bite one of these bad boys.
2) This recipe can be ready in just 20 minutes! 2-0. How awesome is that?
3) Although you wouldn’t know it from taste alone, these protein packed tacos are mucho good for you. The mango, the cilantro, the smashed avocado… so much health, baby. Who knew good for you could taste this GOOD?
Now, to break down the flavors! First, let’s talk about the beans. This is my go-to black bean recipe because it’s SO easy to make on the stovetop, and leaves you with the most flavorful beans ever. All you do is sauté an onion in olive oil, add garlic (onion+garlic=magical flavor always and forever), a pinch of crushed red, and a sprig of cilantro. Then you dump in a whole can of black beans – juice and all – and simmer it down for 15 minutes. Add salt if needed, and BOOM, you’re done. Flavorful beans all ready for the eating. And trust me, it’s easy to eat a whole batch of these beans with just a spoon. Make a double batch if you’re an avid “taste-tester”, like me 😉
Flavor number two is our juicy and sweet fresh mango. Are you like, um, “Ashley… fresh mango… in zee tacos…?! I dunno about that.” I know. I know. But you have to trust me here because mango on your taco is where it’s at! And where it’s at is where you wanna be, am I right? The mango just adds a touch of sweetness… and truly makes these tacos sing! Plus, spicy guacamole + sweet fruit —–> match made in heaven!
Speaking of spicy guacamole, let’s move on to that. This is what I call half-ass guacamole, because I only add in salt, pepper, lime juice, and jalapeño. I know most folks add in onions and tomatoes and who-knows-what-else, but the beans and mango are already SO flavorful, so a spicy and simple guac works best here. I also just lightly smash everything together in a small bowl because I like my guac nice and chunky. If you prefer a smoother end result, you can run it in a small food processor or even the blender.
Once you have those three key ingredients ready to go, you simply layer them in warm, heavenly taco shells, top with chopped cilantro and scallions, and devour! P.S. I added sour cream and hot sauce to my final taco, and let’s just say it wasn’t a bad decision 😉 You know, if you’re over-the-top decadent like that. Happy Friday!!! xoxo
Healthy Black Bean, Mango, and Guacamole Tacos
Ingredients
For the beans:
- (1) 15 oz. can black beans, *do not drain
- 1 tablespoon olive oil
- 1/2 small red onion, diced
- 2 cloves garlic, minced
- 1 sprig cilantro
- 1/2 teaspoon crushed red pepper
- Salt, to taste
For the mango:
- 1 large, ripe mango, chopped into bite sized pieces
- 1 teaspoon fresh lime juice
For the Guacamole:
- 2 large ripe avocados, pitted and smashed
- 2 teaspoons fresh lime juice
- 1 small jalapeño pepper, seeds removed, minced
- Salt, to taste
Remaining ingredients:
- 6 flour or corn tortillas
- cilantro, chopped (optional)
- scallions, chopped (optional)
- Sour cream and hot sauce, for serving
Instructions
For the beans:
- Add oil to a small saucepan and heat over medium flame. Add onion and sauté for 5-6 minutes, or until onions have softened. Add garlic, cilantro, and pepper; cook for 1 minute, or until garlic is fragrant. Add beans and bean liquid, stir, and simmer for about 10 minutes, or until sauce has thickened. Remove cilantro sprig before serving beans.
For the mango:
- Place mango in a small bowl. Toss with lime juice; set aside.
For the guacamole:
- Place avocados, lime juice, and jalapeño peppers in a small bowl. Lightly smash the ingredients together, and add salt as needed.
Assembly:
- Scoop a 1/4 cup of beans into the tortilla shell, then add mango, and guacamole. Top with scallions, cilantro, and sour cream, if using. Serve at once!
