My son loves the store bought Toll House ice cream cookie sandwiches because he says the frozen cookies are still soft enough to easily bite into. When I make these from scratch and he gets one from the freezer, he says the frozen cookie is too hard and isn’t easy to bite into. I realize he could let it set out for a little bit, to defrost the cookie some, but do you have any other ideas on how the frozen cookie can still be soft enough to bite into? I wonder if the preservatives in the store bought version might be the reason.

thank you for all of these, really like the Baileys Irish Cream Chocolate Chip Cookies, a nice way to cut, what for me are an overload of sweetness or maybe just too much chocolate in most chocolate chip cookies, also really like the ice cream sandwiches, the perfect summer treat!
