GRILLED CHEESE! I’m totally into them lately. I’m kind of in a sandwich phase (hello, busy Summer days and looooong Summer nights), and I’m totally embracing the situation with fun and unexpected combinations.
Enter this bacon, peach, and arugula grilled cheese! It’s wild and wonderful and if you’re a fan of juicy peaches, crispy bacon, and tangy blue cheese, I think you’ll just love it!
I choose a soft, chewy ciabatta roll as the base since it’s hearty and can hold a lot of toppings. Ciabatta rolls are also just really delicious, so I highly recommend using one for your next sandwich adventure.
The rest of this sandwich situation is super easy! Slather the interior of your sliced roll with butter (lots of butter = a great sandwich!), sprinkle it with a generous amount of blue cheese, and then top with sliced peaches and send it off to the oven to bake for about 8 minutes. This will get your bread crisp, your cheese melted, and your peaches juicy! All good things, my friends.
Once it comes out of the oven, you just top it with freshly fried bacon, spicy arugula, and if you’re in the mood, a few slices of red onion.
It’s a quick, easy, sensationally good seasonal sandwich! Dooooo it 🙂
Bacon, Peach, and Arugula Grilled Cheese – Baker by Nature
Makes 1 sandwich; double as needed
1 ciabatta roll, sliced in half
2 tablespoons unsalted butter, softened
2 ounces blue cheese, crumbled
2-4 slices bacon, fried crispy (I say go with 4!)
1 semi-firm peach, sliced into 1/2 inch pieces (you want your peach ripe but not too soft)
1 handful of arugula, washed and patted dry
thinly sliced red onion to garnish (optional)
Preheat oven to broiler setting. Line a baking pan with parchment paper, and set aside. Butter the insides AND outsides of your bun with the softened butter, then place the ciabatta bun on the prepared baking sheet. Spread 1/2 the blue cheese on the bun, then layer the peaches and onion (if using), then remaining blue cheese. Place baking sheet in the oven and bake for about 8 minutes – keeping a close eye – or until your cheese is bubbling and your peaches have begun to ooze juice. Remove pan from oven, top one side with bacon and arugula, then add the other bun and press sandwich together. Eat right away!
