My kitchen smells amazing right now. Yours can too! All you need is some patience, peaches, and a few other simple pantry items! It’s that simple.
Peaches remind me of Summers spent in Indiana; my Mom’s best friend, Rosalyn, lives there. Rosalyn is a real gem, and the closest thing to a grandmother I’ve ever known. My Mom would often pack up the car, along with my brother and I, and take the 13 hour drive down to visit her during Summer vacation.
I miss those trips. Those long Summer days.
Driving with my Mom on road trips are some of my favorite memories. She would always let me control the radio if I stayed up with her. I loved that.
Arriving in Indiana at dawn was a wonderful feeling. The sun would slowly creep out of the darkness and greet us. My Mom would carry my sleeping brother into the house, trying her best not to wake him. I would help carry the luggage and then nestle myself in bed for a few hours, preparing for the day already at hand.
The novelty of country living was alluring to me. The air was crisp and inviting. The soft blades of grass and towering trees provided the perfect blanket of shade for afternoon naps. The soft wind causing my dresses to billow out and around me. The hours of daylight seemed to linger as long as I could keep my eyes open.
When it came time to gather the fruit for cobbler, Rosalyn would lean a ladder against the peach tree so I could climb up and pick the peaches myself. She made sure I was part of every step of making the cobbler, from picking the peaches to sprinkling the cinnamon on top. This type of thing can make a 7 year old girl feel very important.
This cobbler smelled so good while baking. It smelled so good I didn’t even mind that the oven caused my small apartment to turn into an unbearable heat box.
Make this, top it with a scoop of ice cream, and revel in the fact that Summer is here, and life is good.
Peach Cobbler- Paula Deen
Ingredients
- 4 cups peeled, sliced peaches
- 2 cups sugar, divided
- 1/2 cup water
- 8 tablespoons butter
- 1 1/2 cups self-rising flour
- 1 1/2 cups milk
- Ground cinnamon, optional
Directions
Preheat oven to 350 degrees F.
Combine the peaches, 1 cup sugar, and water in a saucepan and mix well. Bring to a boil and simmer for 10 minutes. Remove from the heat.
Put the butter in a 3-quart baking dish and place in oven to melt.
Mix remaining 1 cup sugar, flour, and milk slowly to prevent clumping. Pour mixture over melted butter. Do not stir. Spoon fruit on top, gently pouring in syrup. Sprinkle top with ground cinnamon, if using. Batter will rise to top during baking. Bake for 30 to 45 minutes.
To serve, scoop onto a plate and serve with your choice of whipped cream or vanilla ice cream
