It’s the holiday season… and homemade gifts are all the rage! I have been on a roll this year chugging out salted caramel pretzel pecan bon bons, double chocolate dipped peanut butter stuffed pretzels, coffee caramelized popcorn dark chocolate bark, and now Chocolate Covered Nut Brittle.
The best part?! This easy recipe only requires 3 ingredients! Thanks to Planter’s Seasonal Nuts collection, making homemade holiday gifts is easier than ever. For this recipe I used their Winter Spiced Mix, and my family and friends RAVED over this nut brittle! The mix includes honey roasted peanuts, almonds, honey roasted sesame seed sticks, cashews, and pecans. It’s flavored with honey and cinnamon and just tastes AMAZING! I will be eating this by the handful all Winter long.
The nut brittle comes together in a matter of minutes…
then you just pour some melted chocolate on top (and a pop of salt, if you fancy that kind of thing)…
and let it cool. Once it’s cool, chop it up, and serve! You can of course eat this, gift this, or do a little of both ๐

Chocolate Covered Nut Brittle
Ingredients
- 1 cup + 2 tablespoons sugar
- 3/4 cup Planter's Winter Spiced Mix
- 8 ounces semi-sweet chocolate, melted
Instructions
- Line a large baking sheet with a silicon baking mat (recommended) or parchment paper that has been generously coated in non-stick spray; set aside.
- Place the sugar in a heavy-bottomed saucepan over medium-high heat. Don't stir the sugar until you see it's begun to melt; about 1-2 minutes. Once the sugar begins melted use a heatproof rubber spatula to move the sugar around the pan (it will clump up a little; that's ok). Continue to cook - stirring constantly - until the sugar has become a deep, dark caramel color; about 4 minutes.
- Once the caramel has reached the desired color, remove pan from heat, stir in the nuts (stir quickly to cover them all), and pour the mixture onto the prepared pan. Use the heatproof spatula to spread the mixture out as thinly as possible.
- Allow mixture to cool while you melt your chocolate.
To melt the chocolate:
- Place chocolate in a small microwave safe bowl. On low power microwave chocolate in 20 second increments, stirring in between, until completely melted.
- Pour chocolate over nut brittle, then allow it to harden (a few hours on the counter or 1 hour in the refrigerator). Once it's completely cooled, use a sharp knife to cut it into pieces.
