I learned the hard way that skipping meals is a major no-no for me. Seriously… I’m one of those people who transform from happy to hangry like that. And really, hangry doesn’t look good on anyone.
Grilled cheese is one of my favorite go-to meals to keep my hunger, attitude, and wallet in check. Plus, does it really get any better than a sandwich made up of crispy bread and melted cheese…?
In this case, the answer is yes. Yes it does.
Because while plain ol’ grilled cheese is still a star, grilled cheese with roasted strawberries, fresh basil, and creamy goat cheese is just a total knock out!
Seriously you guys, get your strawberries a roasting now. You’ll thank me later.
Grilled Goat Cheese Sandwich with Roasted Strawberries and Basil – Baker by Nature
Makes 2 sandwiches – double as needed
Ingredients:
4 pieces sliced bread
1 tablespoon butter, softened
4 ounces goat cheese, softened till spreadable
3 tablespoons fresh basil leaves, whole or chopped
1 heaping cup strawberries, sliced
1 teaspoon olive oil
1/2 tablespoon balsamic vinegar
For the strawberries:
Preheat oven to 400 degrees (F). Line a baking sheet with parchment paper and set aside. In a small mixing bowl toss the sliced strawberries with the olive oil, then spread in a single layer on the prepared baking sheet. Roast for 10-12 minutes. Remove from the oven and transfer roasted strawberries back to a mixing bowl; toss with balsamic vinegar.
Putting it all together!
Heat a skillet over medium high heat. Spread one side of each piece of bread with 1/4 tablespoon of softened butter. On the other side of two of the pieces spread the softened goat cheese. Top the last two pieces of bread with roasted strawberries and basil, then sandwich together. Grill on each side till golden brown and melted.

Oooh, I actually haven’t tried roasting strawberries…sounds interesting. If they are as good as roasted pears or peaches – which I am sure they are – then I’m all in! This sandwich is so tempting! I want a plate, please 🙂

Hangry really doesn’t look good on me either. I honestly don’t understand how people can starve themselves. This sandwich is gorgeous and so seasonally appropriate! I bet it’s absolutely delicious too!

I’ve done strawberries, goat cheese, and basil before in a salad…but never in grilled cheese. GENIUS. Definitely the perfect cure for the hangry crankiness!
