Yup. It’s tuna salad. Don’t judge me.
Let’s start with hearty sliced bread! Good bread is key!
Let’s also snag some stunning baby spinach leaves – grab a generous handful for beauty and freshness!
Now all we need to do is mix up our tuna salad!
It’s beaming with flavor thanks to flirty little capers, sassy dijon, reliable salt & pepper, and a heart healthy dose of olive oil.
Say it with me folks, simple is sexy. Yes, yes it is.
With Summer in full swing, may I suggest packing some sandwiches and basking in all the outdoor delights this season has to offer?

Simple Tuna Salad: Baker by Nature
Makes enough for 1 sandwich, double as needed
1 – 5 oz. Can of Tuna Fish (whatever brand/style you prefer is fine!)
1 Tablespoon Extra Virgin Olive Oil
1 Tablespoon Dijon Mustard
1 Tablespoon capers
Salt and Pepper to flavor
Handful of spinach leaves
Sliced Bread
In a small bowl mix together tuna, olive oil, capers, and dijon; add salt and pepper as needed. Pile spinach and tuna on bread, sandwich together, and enjoy!

This will be our next week lunch with the kids. I always have 1-2 cans of tuna in my pantry and I’m so inspired to try this. Yes, I’ll get good bread too!! I’m so happy to see capers in this tuna salad. It’s my favorite!! It adds great flavor (but my kids are not into yet). Can’t wait for lunch time…=)
